The Freestyle 425 retains its cooking area with grills and adds a reversible griddle designed to be compatible with this model. The griddle can be used to replace part of the grill area or placed on top of the grills, depending on the setup required at any given time.

This allows you to set up one area for griddle cooking whilst keeping another for cooking directly on the grills. In a single cooking session, you can, for example, sear meat on the WAVE grills whilst preparing vegetables, eggs or delicate ingredients on the cast-iron surface.

The included griddle is made of cast iron with a porcelain coating and offers a cooking surface of 29.5 × 45.1 cm. Its two sides allow you to change the type of contact with the food without needing two separate accessories.

The flat side is designed for griddle-style cooking: it’s handy for fish, vegetables, breakfast dishes, caramelised onions or small items that might be awkward to cook on an open grill. When turned over, the raised side allows you to create sear marks.

This reversibility makes the griddle more than just an additional smooth surface. You can choose which side to use depending on the recipe and switch techniques whilst keeping the same accessory.

The two side shelves are foldable – a simple yet very useful solution when the barbecue has to share space with terraces, patios or outdoor cooking areas where every centimetre counts.

With the shelves extended, the Freestyle 425 is 132 cm wide and provides extra worktop space on both sides. When folded away, the width is reduced to 84 cm, making it easier to find space for it once you’ve finished cooking.

The Freestyle 425 features the JETFIRE ignition system, designed to light the main burners using a jet of flame. It is a straightforward solution for getting the barbecue up and running and starting to use the different cooking zones.

Added to this is the ACCU-PROBE thermometer integrated into the lid, which allows you to check the internal temperature without having to constantly open the barbecue. This is particularly useful when cooking with the lid closed and you want to keep an eye on the heat inside the cooking chamber.

Together, these two systems simplify two key stages of cooking: JETFIRE makes lighting the barbecue easier, whilst ACCU-PROBE helps you monitor the temperature whilst you cook.

Use and maintenance

First use

    1. Check the assembly and gas connection. Before using it for the first time, check that the barbecue is correctly assembled and carry out the leak test specified by Napoleon. Repeat this check whenever any component of the gas system is replaced, refilled, repaired or reconnected
    2. Wash the WAVE grates before cooking. Napoleon recommends washing the grates by hand with warm water and mild soap to remove any manufacturing residues. Do not put them in the dishwasher. Rinse them with hot water and dry them thoroughly with a soft cloth.
    3. Season the cast iron. The WAVE grates are made of porcelain-coated cast iron and must be seasoned before first use to create a protective layer. Apply a thin film of high-temperature-resistant oil over the entire surface.
    4. Do the same with the reversible griddle. Napoleon specifies that the 56426 porcelain-enamelled cast iron griddle should be treated like a cast iron frying pan. For regular seasoning of the cast iron, the brand recommends a thin layer of oil and heating to approximately 175–205 °C for 30–60 minutes, without exceeding the smoke point of the oil used.

During use

  • Preheat before cooking. Napoleon recommends preheating properly to stabilise the heat and reduce problems with uneven cooking or flare-ups.
  • Keep the vents clear.Do not block the openings intended for combustion airflow and ventilation of the trolley.
  • Monitor grease build-up. Excess grease on the searing plates or the drip tray increases the risk of flare-ups and must be removed regularly.
  • Use the griddle as intended. The 56426 can replace the cooking grids or be used on top of them. Choose the flat or raised side depending on the food and avoid knocking or dropping the unit, as the porcelain finish can be damaged by impacts.

After cooking

  1. Switch off the barbecue and turn off the gas supply. Check that the controls are in the ‘off’ position once cooking is complete.
  2. Allow the barbecue to cool down before giving it a thorough clean. The manual warns that cleaning should only be carried out when the barbecue is cool to avoid burns.
  3. Remove any food residue. Keeping the grills and griddle free of residue prevents dirt from building up between uses.
  4. Check the grease collection tray. Don’t wait until the tray is full to clean it. Accumulated grease poses a fire hazard.

Cleaning

  • Remove any built-up residue using a tool suitable for cast-iron grills.
  • For a deeper clean, use warm soapy water and dry the grates thoroughly.
  • After a thorough clean, reapply a protective layer of high-temperature-safe oil.
  • Napoleon recommends using a brass brush or a brush suitable for porcelain-enamelled cast iron, avoiding tools that could damage the coating.

Reversible griddle 56426

  • Wait until the hob has cooled down sufficiently before handling it or carrying out a thorough clean.
  • Remove residue and grease from both sides, taking care to ensure the drainage holes remain clear.
  • Avoid harsh cleaning products or tools that could damage the porcelain coating.
  • Dry it thoroughly before storing and apply a protective layer of oil in accordance with Napoleon’s guidelines for porcelain-enamelled cast iron.

Drip and grease tray

  1. Remove the drip tray to access the grease collection area.
  2. Remove any accumulated grease using a spatula or scraper.
  3. If you are using the disposable grease tray supplied by Napoleon, the manufacturer recommends replacing it approximately every 2–4 weeks, depending on frequency of use.

Control panel and external surfaces

  • Clean the control panel using only warm soapy water and a soft cloth.
  • Do not use abrasive products on the panel, painted surfaces, porcelain enamel or finished metal parts.
  • Handle porcelain surfaces with care: the glaze may chip if knocked.

Regular maintenance

  • Re-season the cast iron. Napoleon recommends re-seasoning the grates approximately every four months or at the start and end of the barbecue season.
  • Check the burners and vents. Keep the air inlets free of debris. Air damper adjustments are not part of routine maintenance and, if necessary, must be carried out by a qualified person.
  • Carry out an annual service. The manual specifies that the barbecue must undergo a full inspection and service once a year by qualified service personnel.
  • Do not ignore any unusual changes in the flame. If you notice persistent yellow flames, ignition problems, a smell of gas or erratic behaviour, stop using the barbecue and follow the diagnostic and service instructions in the manual.

Storage

  • Store the barbecue clean and completely dry to reduce the build-up of dirt and moisture.
  • Before storing the barbecue for an extended period, clean and protect the WAVE grills and the reversible griddle.
  • Keep the ventilation openings free from dirt, even whilst the barbecue is in storage.
  • If you are storing the barbecue indoors, refer to the specific instructions in the manual regarding disconnecting and storing the propane cylinder. Cylinders must not be stored in garages, sheds or other enclosed spaces.

This recipe makes use of the reversible griddle included with the Napoleon Freestyle 425 Pack to cook simple, juicy stuffed tomatoes with a lightly browned surface. It is a great way to use the griddle area for delicate ingredients that need continuous support while cooking.

You can prepare the tomatoes while keeping part of the WAVE cooking grids free for cooking meat, fish or other vegetables at the same time.

Ingredients

  • 4 firm, ripe tomatoes
  • 150 g cheese that melts well
  • 1 garlic clove, chopped
  • Herbs to taste, such as parsley, basil or thyme
  • Olive oil
  • Salt
  • Black pepper

Preparation

  1. Prepare the tomatoes. Wash them, cut them in half and carefully remove some of the seeds and pulp to create space for the filling.
  2. Prepare the filling. Mix the cheese with the garlic and chopped herbs. Add a little pepper and adjust the salt according to the cheese used.
  3. Preheat the barbecue. Place the reversible griddle on the Freestyle 425 and use the flat side. Preheat it gradually before adding the food.
  4. Brown the tomatoes. Add a light coating of oil and place the tomatoes cut-side down on the griddle first, until they begin to brown.
  5. Fill them. Turn the tomatoes over, divide the cheese and herb mixture between them and continue cooking with the lid closed to help soften the tomatoes and melt the cheese.
  6. Finish and serve. Remove the tomatoes when they are tender but still hold their shape. Add fresh herbs and a small drizzle of olive oil before serving.

How to make the most of the pack

The continuous griddle surface helps keep the tomatoes stable and prevents cheese or small ingredients from falling between the cooking grids. At the same time, you can keep part of the WAVE cooking grids available for preparing the main course.
