The Phantom Freestyle PRO 425 features a stainless steel warming rack that adds a second level above the main cooking surface. It’s useful for keeping dishes warm whilst you finish the rest of the meal and for making better use of the space available inside the barbecue.

It also allows you to separate certain foods from the main heat zone when the recipe calls for it, providing an extra layer of organisation when you have meats, breads or side dishes coming off the barbecue at different times.

When using the rotisserie from the pack, the Napoleon manual advises removing this rack. These are two distinct barbecue accessories that expand its capabilities, but are designed for use in different cooking set-ups.

Fold-away shelf to save space

Although it features four main burners and a side SIZZLE ZONE, the Phantom Freestyle PRO 425 maintains a compact design. Its fold-away side shelf allows you to reduce the width it takes up once you’ve finished cooking or when you need to make better use of a terrace with limited space.

The Heavy Duty 69302 rotisserie can rotate up to 6.8 kg of properly balanced food. Its heavy-duty motor works in conjunction with the counterweight assembly to ensure continuous, stable rotation, whilst the two four-pronged forks secure the piece to the spit.

This constant movement allows different sides of the food to pass successively through the heat zone – a technique particularly useful for chicken, duck and other cuts that benefit from even cooking all the way round.

And that’s where this pack goes beyond simply being a Phantom Freestyle PRO 425 with an added accessory: in the same package, you get a four-burner, SIZZLE ZONE, stainless-steel barbecue, plus a second cooking method designed specifically for large spit-roasts.

First use

1. Check the installation and carry out a leak test

Before lighting the barbecue for the first time, check that it has been assembled correctly, that the hose is not kinked or in contact with the grease tray or surfaces that may reach high temperatures, and that all gas connections are correctly installed.

Napoleon requires a leak test before first use, whenever the gas cylinder is reinstalled or refilled, whenever any component of the gas system is replaced, and at least once a year. Apply a solution made from equal parts water and liquid soap to the connections: bubbles indicate a leak. Never check for gas leaks with a flame.

2. Wash the stainless steel WAVE cooking grids

Before cooking for the first time, wash the cooking grids by hand with warm water and mild soap to remove any residue left from the manufacturing process. Rinse them with hot water and dry them completely with a soft cloth.

3. Carry out the initial burn-off

Remove the warming rack and run only the main burners at maximum power for approximately 30 minutes. This process removes residues from paints and lubricants used during manufacturing.

It is normal to notice some odour during this initial burn-off. Napoleon states that the SIZZLE ZONE side burner must not be used during this procedure.

During each use

Safe ignition

  • Make sure all control knobs are in the off position before slowly opening the gas supply.
  • Always open the main lid before lighting the burners.
  • Use the JETFIRE system following the procedure specified by Napoleon.
  • If a burner does not ignite within approximately 5 seconds, turn it off and allow the gas to disperse for 5 minutes before trying again.
  • Do not adjust the cooking grids while they are hot or while the barbecue is operating.
  • Do not move the barbecue while it is in use.

Preheating and heat control

Preheat the barbecue before adding food and use the four burners independently to create the heat zones you need. For indirect cooking, leave the burners directly beneath the food switched off and monitor the cooking chamber temperature using the ACCU-PROBE.

Avoid covering more than 75% of a cooking surface with solid metal items such as griddles or containers. Air circulation is necessary for the burners to operate correctly.

The ceramic surface of the infrared burner requires different care from a conventional cooking grid. Do not use a wire brush on the ceramic surface and do not clean it with water.

Most juices and residue are incinerated by the high temperature. When accumulated residue needs to be removed, Napoleon recommends running the infrared burner at maximum power for approximately 5–10 minutes.

Do not close the side burner lid while the burner is operating or still hot, and avoid sudden temperature changes on the ceramic surface, as these may cause cracking.

After cooking

  1. Turn off all burners.
  2. Close the gas supply at the cylinder.
  3. Allow the barbecue to cool completely before carrying out cleaning or maintenance.
  4. Check for grease build-up in the grease tray, sear plates and cooking chamber.
  5. Before the next use, make sure the grease tray is clean to reduce the risk of flare-ups or grease fires.

Regular cleaning

Stainless steel WAVE cooking grids

Preheat the barbecue to carbonise any stuck-on residue and then use a suitable stainless steel grill brush. Permanent discolouration may develop over time as a result of high temperatures; Napoleon considers this normal for stainless steel and it does not indicate a material defect.

Grease tray and cooking chamber

Do not allow grease to accumulate inside the barbecue. Regularly clean the grease tray, sear plates and accessible interior surfaces. Napoleon's own checklist recommends checking the grease tray before every barbecue session.

Exterior and control panel

Clean the surfaces only when the barbecue is cold. Avoid abrasive products or tools that could damage the Phantom finish. Do not mistake hardened grease deposits on the inside of the lid for peeling paint: regular cleaning prevents these layers from drying out and flaking off.

Gas system maintenance

  • Periodically inspect the hose and replace it if it shows excessive abrasion, cuts, cracks, deformation or signs of heat damage.
  • Keep the burner air inlets clear and check for dirt, spider webs or other obstructions.
  • Carry out another leak test after working on any component of the gas circuit.
  • Do not use the barbecue if you detect the smell of gas or a leak that cannot be resolved. Shut off the gas supply and have it inspected by a professional or authorised dealer.

Using and cleaning the Heavy Duty Rotisserie 69302

Before starting rotisserie cooking, remove the warming rack, centre the food correctly on the spit rod and use the counterweight when necessary to achieve balanced rotation. Do not exceed 6.8 kg of properly balanced food.

Place a metal tray beneath food that may release significant amounts of fat and check that the spit rod rotates freely before leaving it to cook with the lid closed.

When finished, disconnect the rotisserie motor from the electrical outlet. Once the components are cool, remove the spit rod, forks and other parts used, wash them with warm soapy water and store them indoors. Always use heat-resistant gloves when handling the assembly while it is still hot.

Storage and periods of non-use

If the barbecue is going to remain unused, shut off the gas supply and disconnect the hose from the cylinder. The propane cylinder must be stored outdoors, in a well-ventilated location and out of the reach of children.

Do not store a propane cylinder inside a building, garage, shed or other enclosed space. Do not store a spare cylinder beneath the barbecue head or next to the side burner either.

Before using the barbecue again after an extended period of inactivity, check the condition of the hose, burner inlets and connections, and carry out the leak test specified by Napoleon.

Rotisserie duck with orange and Grand Marnier

A perfect recipe for making the most of the Heavy Duty Rotisserie included FREE in this bundle: a whole duck slowly turning over indirect heat, with an orange, ginger and Grand Marnier glaze that gradually caramelises as the fat renders and drips into the tray below.

The Phantom Freestyle PRO 425 does not require a rear burner for rotisserie cooking. The setup consists of keeping the heat on either side while leaving the burners directly beneath the duck switched off.

Ingredients

  • 1 whole duck, approximately 2.5–2.8 kg
  • 3 oranges
  • 150 ml orange juice
  • 60 ml Grand Marnier
  • 2 garlic cloves, finely grated
  • 1 teaspoon freshly grated ginger
  • Salt
  • Black pepper
  • 250 ml water for the drip tray

1. Prepare the duck

Remove the giblets and any visible excess fat, then dry the duck thoroughly. Score the skin over the breast in a shallow diamond pattern, taking care not to cut into the meat. This helps some of the duck's abundant fat render out during cooking.

Mix the zest of one orange with the garlic, ginger, salt and pepper and rub it over the outside of the duck. Tie the legs and wings close to the body to create a compact shape that can rotate without loose parts.

2. Set up the rotisserie and balance the duck

Remove the warming rack before installing the rotisserie. Fit one of the four-prong forks onto the spit rod, pass the rod lengthwise through the duck and secure the second fork from the opposite side.

Before switching on the motor, check that the duck is centred and balanced. Use the counterweight supplied with the Napoleon 69302 if necessary. A duck of this size is comfortably within the verified maximum capacity of 6.8 kg of properly balanced food.

3. Prepare the Phantom for indirect cooking

Preheat the barbecue to an internal temperature of approximately 175 °C. With a four-burner setup, use the outer burners and leave those directly beneath the duck switched off.

Place a metal tray beneath the duck with around 250 ml of water. As well as collecting the fat rendered from the duck, this prevents the fat from dripping directly onto the hot components. Install the spit rod, connect the motor and check for a few seconds that it rotates freely before closing the lid.

4. Prepare the orange glaze

Mix the 150 ml orange juice with 60 ml Grand Marnier. Set this mixture aside for the second half of the cooking process. This avoids applying the sugars too early and prevents them from darkening before the duck is cooked through.

5. Let the rotisserie do the work

Cook with the lid closed and maintain a steady temperature of around 175 °C. After approximately the first hour, check the tray and add a little more water if too much has evaporated.

From this point onwards, begin lightly brushing the duck with the orange and Grand Marnier mixture. Repeat several times during the remainder of the roast, allowing each layer to set while the duck continues to rotate.

6. Let the thermometer decide when it is ready

The total cooking time will depend on the actual weight of the duck, its starting temperature and the thermal stability of the barbecue, so the clock should only be used as a guide. For a whole duck of this size, allow around 3 hours and begin checking for doneness in advance.

The duck must reach at least 74 °C internal temperature. Use a thermometer to check the thickest part of the breast and the inner areas of the thigh and wing, avoiding contact with the bone. Do not judge doneness solely by the colour of the meat or juices.

7. Rest and serve

Remove the spit rod using heat-resistant gloves and leave the duck to rest for around 10–15 minutes before removing the forks and carving.

Serve with roasted orange wedges, potatoes or vegetables. The result highlights exactly what the rotisserie brings to this bundle: golden skin, even cooking around the entire bird and a roast that turns the Napoleon 69302 into far more than just a free accessory.
