Grilled Seafood Recipe with Roasted Vegetable Garnish and Garlic Bread

Grilled seafood is a delicious and healthy option that allows you to enjoy its pure flavour with a juicy texture and a slight smoky touch. The Napoleon stainless steel griddle ensures even cooking and perfect sealing that brings out the natural flavours of the ingredients.To complement this recipe, we add a side of roasted vegetables, which will bring freshness and balance to the dish, along with toasted garlic bread that will absorb all the juices and flavours.

Ingredients (serves 4)

For the grilled seafood:
  • 500 g fresh prawns or shrimp
  • 400 g sliced squid
  • 300 g scallops or shelled mussels
  • 2 cloves garlic, chopped
  • Juice of 1 lemon
  • 4 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • 1 teaspoon sweet or hot paprika (optional)
  • 1 teaspoon chopped fresh parsley
  • Lemon slices for serving
For the roasted vegetable garnish:
  • 1 red pepper, cut into strips
  • 1 yellow pepper, cut into strips
  • 1 courgette, thinly sliced
  • 1 aubergine, thinly sliced
  • 8 green asparagus spears
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • Freshly ground black pepper to taste
For the toasted garlic bread:
  • 1 baguette or rustic bread
  • 3 tablespoons melted butter
  • 1 clove garlic, finely chopped
  • 1 teaspoon fresh parsley, chopped

Preparation

Step 1: Prepare the seafood
  1. Wash the seafood thoroughly and pat dry with paper towels.
  2. In a large bowl, combine the seafood with the chopped garlic, lemon juice, olive oil, salt, pepper, and paprika.
  3. Let marinate for 15-20 minutes while you prepare the rest of the ingredients.
Step 2: Roast the vegetables
  1. Preheat the grill and set the griddle to medium-high heat.

  • 300 g firm tofu, cut into large cubes
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • 1 teaspoon soy sauce
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

Preparation:

  1. In a bowl, mix the mushrooms and tofu with the garlic, lemon juice, olive oil, soy sauce, paprika, salt and pepper.
  2. Let marinate for at least 20 minutes.
  3. Cook on a hot grill for 3-4 minutes on each side until golden and tender.
