1️⃣ Medium-Cooked Rib-Eye in the SIZZLE ZONE™ with Garlic Butter


Ingredients:



  • 1 rib-eye steak (500–700 g, 3–4 cm thick).

  • Coarse salt and freshly ground black pepper.

  • 2 tablespoons of butter.

  • 2 cloves of garlic, finely chopped.

  • 1 sprig of fresh rosemary.


Method:



  1. Preheat the SIZZLE ZONE™: Turn on the side burner and set it to maximum power. Allow it to reach a temperature of 800 °C for 5 minutes.

  2. Prepare the rib-eye: Pat the meat dry with kitchen paper. Generously season both sides with coarse salt and pepper.

  3. Sear in the SIZZLE ZONE™: Place the rib-eye directly on the hot grates of the SIZZLE ZONE™. Cook for 2–3 minutes per side to achieve a golden sear and a caramelised crust.

  4. Finish Cooking: Transfer the rib-eye to the main grill set to a medium-low temperature (150–160 °C) and cook to the desired doneness:

    • Rare: 48–50 °C (approximately 4–5 minutes).

    • Medium: 54–57 °C (6–7 minutes).

    • Well Done: 63–65 °C (8–9 minutes).



  5. Prepare the Garlic Butter: While the rib-eye cooks, melt the butter in a pan over the side burner. Add the chopped garlic and rosemary, allowing the flavours to meld for 1–2 minutes without burning the garlic.

  6. Serve: Remove the rib-eye from the grill and allow it to rest for 5 minutes so the juices redistribute. Drizzle with the garlic butter and serve immediately.


2️⃣ Wholemeal Bread Baked on the Barbecue


Ingredients:



  • 500 g of wholemeal flour.

  • 10 g of salt.

  • 10 g of brown sugar.

  • 1 sachet of dry yeast (7 g).

  • 300 ml of lukewarm water.

  • 2 tablespoons of olive oil.


Method:



  1. Prepare the Dough: In a large bowl, mix the flour, salt, sugar, and yeast. Add the lukewarm water and olive oil, mixing until a homogeneous dough is formed. Knead for 10 minutes until it is elastic and smooth.

  2. Proof: Cover the dough with a damp cloth and let it rest in a warm place for 1 hour until it doubles in size.

  3. Preheat the Barbecue: Turn on the main burners and set to a medium temperature (180–2200°C. Place a pizza stone or an oven tray on the grill to preheat.

  • 1 sprig of fresh rosemary.

Method:

  1. Preheat the SIZZLE ZONE™: Turn on the side burner and set it to maximum power. Allow it to reach a temperature of 800 °C for 5 minutes.
  2. Prepare the rib-eye: Pat the meat dry with kitchen paper. Generously season both sides with coarse salt and pepper.
  3. Sear in the SIZZLE ZONE™: Place the rib-eye directly on the hot grates of the SIZZLE ZONE™. Cook for 2–3 minutes per side to achieve a golden sear and a caramelised crust.
  4. Finish Cooking: Transfer the rib-eye to the main grill set to a medium-low temperature (150–160 °C) and cook to the desired doneness:
    • Rare: 48–50 °C (approximately 4–5 minutes).
    • Medium: 54–57 °C (6–7 minutes).
    • Well Done: 63–65 °C (8–9 minutes).
  5. Prepare the Garlic Butter: While the rib-eye cooks, melt the butter in a pan over the side burner. Add the chopped garlic and rosemary, allowing the flavours to meld for 1–2 minutes without burning the garlic.
  6. Serve: Remove the rib-eye from the grill and allow it to rest for 5 minutes so the juices redistribute. Drizzle with the garlic butter and serve immediately.

2️⃣ Wholemeal Bread Baked on the Barbecue

Ingredients:

  • 500 g of wholemeal flour.
  • 10 g of salt.
  • 10 g of brown sugar.
  • 1 sachet of dry yeast (7 g).
  • 300 ml of lukewarm water.
  • 2 tablespoons of olive oil.

Method:

  1. Prepare the Dough: In a large bowl, mix the flour, salt, sugar, and yeast. Add the lukewarm water and olive oil, mixing until a homogeneous dough is formed. Knead for 10 minutes until it is elastic and smooth.
  2. Proof: Cover the dough with a damp cloth and let it rest in a warm place for 1 hour until it doubles in size.
  3. Preheat the Barbecue: Turn on the main burners and set to a medium temperature (180–2200°C. Place a pizza stone or an oven tray on the grill to preheat.
  4. Shape the Bread: Shape the dough (round or elongated) and place it on baking paper. Make diagonal cuts on the surface to allow for expansion during baking.
  5. Bake on the Barbecue: Transfer the dough with the baking paper onto the preheated stone. Close the barbecue lid and cook for 25–30 minutes or until the bread is golden and sounds hollow when tapped on the base.
  6. Cool: Remove the bread from the barbecue and let it cool on a wire rack before slicing.

3️⃣ Tofu and Vegetable Lettuce Wraps

Ingredients:

  • 200 g of firm tofu.
  • 1 tablespoon of sesame oil.
  • 2 tablespoons of soy sauce.
  • 1 carrot, cut into thin strips.
  • 1 red pepper, julienned.
  • ½ cucumber, cut into thin strips.
  • 8 large Romaine lettuce leaves.
  • Sesame seeds (optional).

Method:

  1. Prepare the Tofu: Cut the tofu into strips and pat dry thoroughly with kitchen paper. Coat with sesame oil and soy sauce.
  2. Grill: Preheat the barbecue to a medium-high temperature. Place the tofu directly on the grates or use a griddle if preferred. Cook for 3–4 minutes per side until golden and crisp.
  3. Prepare the Vegetables: Meanwhile, cut the carrot, cucumber, and red pepper into thin strips.
  4. Assemble the Wraps: Lay a lettuce leaf as a base. Add one or two strips of tofu and top with the vegetables. Optionally, sprinkle with sesame seeds for extra crunch.
  5. Serve: Serve the wraps immediately as an appetizer or a light main course.
