Steps to prepare
1. Preparation
- Wash, chop and store all the vegetables in the Oasis refrigerator until ready to use.
- Make sure the vegetable stock is hot when you start cooking.
- Briefly marinate the mushrooms with a drizzle of oil, salt and pepper to enhance their flavour.
2. Start the sofrito
- Place a cast iron paella pan or large frying pan on your Napoleon modular cooktop and heat over medium heat.
- Add olive oil, onion and garlic and sauté until golden brown.

3. Add vegetables
- Add the green beans, peas, artichokes and marinated mushrooms.

4. Add rice and stock
- Add the rice and stir to coat it in the vegetable mixture.

- Cook for 18 to 22 minutes without stirring, allowing a caramelised base to form.
5. Rest and serve
- Remove the paella from the heat and let it rest covered with a clean cloth for 5 minutes.
- Garnish with lemon slices and, if desired, a touch of fresh herbs such as parsley or thyme.
