Pepperoni Pizza

A pizza inspired by the pepperoni pizza shown on the 18-inch Gozney Pizza Server, topped with tomato, mozzarella, Parmesan and plenty of pepperoni slices.

Ingredients for 1 pizza

  • 1 ball of pizza dough
  • Flour for shaping the dough
  • Tomato or pizza tomato sauce
  • Mozzarella
  • Grated Parmigiano-Reggiano
  • Sliced pepperoni
  • Extra virgin olive oil

Preparation

  1. Shape the dough. Lightly flour the dough ball and stretch it from the centre outwards, taking care to preserve the air in the cornicione.
  2. Add the tomato. Spread a thin, even layer of sauce over the dough, leaving the rim uncovered.
  3. Add the cheeses. Distribute the mozzarella over the surface and finish with a small amount of grated Parmigiano-Reggiano.
  4. Add the pepperoni. Arrange the slices across the pizza, leaving some space between them for an even distribution.
  5. Bake and turn. Place the pizza in the oven and turn it as the edge closest to the heat source begins to colour. As a reference, Gozney's pepperoni pizza recipe uses around 450 °C and approximately 90 seconds, with regular turns. Always adjust the cooking time to suit the oven being used.
  6. Remove and serve. Take the pizza out when the cornicione is well developed, the cheese has melted and the pepperoni is cooked to your liking. Leave it to rest briefly before serving.

Margarita Pizza

A classic recipe inspired by the Margherita pizza, shown on the 14-inch Gozney pizza serving board: tomato, mozzarella, Parmesan, basil and a dash of olive oil.

Ingredients for 1 pizza

  • 1 ball of pizza dough
  • Flour for rolling out the dough
  • Chopped tomatoes or tomato sauce for pizza
  • Fresh mozzarella or fior di latte, well drained
  • Grated Parmigiano-Reggiano
  • Fresh basil leaves
  • Extra virgin olive oil

Preparation

  1. Roll out the dough. Lightly flour the work surface and place the ball of dough on top. Press outwards from the centre, taking care not to flatten the edge so as to preserve the air in the crust.
  2. Add the tomato. Spread a thin layer of tomato over the base, leaving the edge free. Avoid overloading the pizza to maintain a good balance between the dough, sauce and cheese.
  3. Distribute the cheeses. Add the well-drained mozzarella in small pieces and finish with a moderate amount of grated Parmigiano-Reggiano.
  4. Add the basil and oil. Scatter a few leaves of fresh basil over the top and finish with a thin drizzle of extra virgin olive oil.
