The range allows you to choose between firewood, charcoal or LPG to adapt the oven to your cooking style. Firewood lets you enjoy the character of an open fire, charcoal offers a slower burn, and gas enables quick ignition with gradual flame adjustment.

According to the specifications confirmed for Spain, the system operates on butane or propane at a pressure of 29–30 mbar. Each fuel must be used in accordance with its specific instructions, and the gas burner must never be used simultaneously with firewood or charcoal.

This flexibility allows you to switch from high-temperature pizzas to meat, fish, vegetables or pan-fried dishes without limiting the oven to a single cooking technique.

30 mm removable cordierite plate

  • Use the digital console to check the air temperature, oven floor temperature and cooking time.

During cooking

  • Do not leave the oven unattended and keep children and pets away.
  • Use heat-resistant gloves and utensils suitable for high temperatures.
  • Do not place plastic or glass utensils inside the oven.
  • Do not cover the oven opening while there is an active flame.
  • Do not use a cooking door while the gas burner is lit.
  • Do not place containers in a way that blocks the burner, air intake or heat circulation.
  • Insert the probes into the thickest part of the food, avoiding bones, fat and cartilage.
  • Keep the probes and their cables away from direct contact with the flame.
  • Do not pour water onto the oven floor. The thermal change may crack the cordierite and moisture may penetrate the insulation.

After cooking

  1. When using gas: turn off the burner and shut off the gas supply following the sequence specified in the manual.
  2. When using firewood or charcoal: stop adding fuel and allow the embers to go out naturally.
  3. Do not pour water onto the fire, embers or oven floor.
  4. Do not disconnect the gas connections while the oven is still operating or remains hot.
  5. Allow the oven to cool completely before touching, moving, cleaning or covering it.
  6. As a reference, the supplied manual states that you should wait at least 3 hours and check that the oven has cooled to approximately 45 °C before moving or storing it.

Cleaning after use

Interior and oven floor

  1. Allow the heat from the oven to burn off any food and grease residue stuck to the interior.
  2. Once completely cold, use a soft brush to remove ash, soot or dry residue.
  3. Remove loose debris with a vacuum cleaner fitted with a plastic nozzle.
  4. Do not wash the oven floor with water or use liquid products inside the chamber.

Exterior and console

  1. Clean the exterior only when it is cold.
  2. Use a soft cloth with warm water and mild soap.
  3. Avoid abrasive scourers, caustic cleaners and products containing bleach.
  4. Do not spray liquids directly onto the console, control knob, connections or ignition system.

Probes

  • Clean them with hot soapy water after each use.
  • Do not fully immerse them or place them in the dishwasher.
  • Dry them thoroughly before storing them.

Maintenance and storage

  • Before each use: check the hose, regulator and connections. Do not use components with cuts, cracks or signs of wear.
  • After reconnecting the gas: carry out the leak test specified in the manual. Never check for a leak using a flame.
  • Check the burner and venturi: make sure there is no food residue, dust or insects that could block the gas flow.
  • Protect the gas inlet: fit its cap whenever the hose is disconnected.
  • Store the oven dry: fit the cover and chimney rain cap only when the oven is completely cold.
  • Protect the probes: store them indoors and keep the silicone connector caps closed.
  • After an extended period without use, inspect the oven and repeat the setup procedure recommended by Gozney.

Rib steak with caramelised onion and herb butter

Rib steak and onion cooking in the Gozney Dome XL Gen 2 Off Black

The Dome XL chamber allows you to work comfortably with a cast-iron pan and a separate tray for the onion. The probes help control the internal doneness of the meat while the side dish is being prepared.

Ingredients

For the rib steak

  • 1 bone-in rib steak about 7–8 cm thick.
  • Flaky sea salt.
  • Freshly ground black pepper.
  • 50 g unsalted butter.
  • 1 head of garlic, cut in half.
  • 1 sprig of rosemary.
  • 1 sprig of thyme.
  • Olive oil.

For the onion

  • 1 large red onion, cut into 3 or 4 thick slices.
  • 1 teaspoon of sherry vinegar.
  • 1 teaspoon of soft brown sugar.
  • 1 pinch of sea salt.
  • 1 bay leaf.

Preparation

  1. Take the rib steak out of the fridge about 30 minutes before cooking and pat the entire surface dry.
  2. Place the onion slices on a tray. Add the vinegar, sugar, salt and bay leaf. Cover with aluminium foil.
  3. With the burner on low heat, cook the onion for 10–12 minutes and set aside, keeping it covered.
  4. Increase the flame and preheat a cast-iron pan or griddle inside the Dome XL.
  5. Lightly coat the meat with oil and season with salt and pepper.
  6. Place the rib steak in the hot pan and cook for about 8 minutes, turning it to form an even crust and caramelise the fat.
  7. Add the butter, garlic, rosemary and thyme. Lower the burner and continue cooking for 2–3 minutes, basting the meat with the butter.
  8. Insert a probe into the thickest part, avoiding the bone, fat and cartilage. Cook until the desired internal doneness is reached.
  9. Remove the meat, pour the butter and pan juices over it and let it rest for 10 minutes.
  10. Serve the rib steak sliced into thick strips alongside the caramelised onion slices.

Trio of fire-cooked vegetables

Three side dishes prepared in cast-iron cookware. The space inside the Dome XL makes it easy to organise each batch and keep sweet, smoky and savoury preparations separate.

Ingredients

Sweet potato with maple butter

  • 1 sweet potato, peeled and cut into large cubes.
  • 30 g unsalted butter at room temperature.
  • 1½ tablespoons maple syrup.
  • ½ cinnamon stick.
  • Olive oil, salt and pepper.

Smoked carrots

  • 200 g baby carrots.
  • ½ teaspoon smoked paprika.
  • 30 g pistachios.
  • 30 g natural yoghurt.
  • Olive oil, salt and pepper.

Green beans with onion

  • 200 g pre-cooked green beans.
  • 2 slices of bacon, cut into strips, optional.
  • ½ red onion, finely diced.
  • Olive oil, salt and black pepper.

Preparation

1. Maple sweet potato

  1. Place the sweet potato in a cast-iron tray, drizzle with a little oil and season.
  2. Mix the butter with the maple syrup and spread it over the sweet potato.
  3. Add the cinnamon, cover the tray with aluminium foil and cook over a high flame for 6 minutes, turning the tray halfway through cooking.
  4. Remove the foil, toss the sweet potato with the melted butter and set aside.

2. Smoked carrots

  1. Place the carrots in another tray and add olive oil, smoked paprika, salt and pepper.
  2. Cover with aluminium foil and cook for 6 minutes, turning the tray halfway through.
  3. Remove the foil, add the pistachios and reduce the flame to its lowest setting.
  4. Return the tray to the oven for around 30 seconds to lightly toast the nuts.
  5. Serve the carrots topped with the pistachios and yoghurt.

3. Green beans with onion

  1. Increase the flame again. Place the bacon in a cold pan with a small amount of oil and put it into the oven.
  2. Stir regularly and cook for around 4 minutes, until the fat has rendered and the bacon begins to brown.
  3. Add the onion, a pinch of salt and black pepper. For a meat-free version, start directly with the onion and oil.
  4. Add the green beans and cook for another minute to heat them through and combine the flavours.
  5. Serve all three preparations together as side dishes or as a sharing menu.

Wood-fired Margherita pizza

An essential recipe for making the most of the cordierite baking stone and wraparound flame of the Dome Gen 2. The aim is to achieve a well-cooked base, an airy crust and a clean balance between tomato, mozzarella and basil.

Ingredients

  • 1 ball of pizza dough.
  • Crushed San Marzano tomatoes.
  • Fresh mozzarella or well-drained fior di latte.
  • Grated Parmigiano Reggiano.
  • Fresh basil leaves.
  • Extra virgin olive oil.
  • Flour for stretching the dough and working with the peel.

Preparation

  1. Preheat the Dome Gen 2 until the baking stone is fully saturated with heat and the flame remains lively and stable.
  2. Lightly flour the dough ball. Press from the centre outwards to push the air towards the edge without flattening it.
  3. Turn and stretch the dough until you get an even base. Place it on a lightly floured surface.
  4. Spread a thin layer of tomato and add the mozzarella, Parmigiano Reggiano, several basil leaves and a drizzle of oil.
  5. Transfer the pizza to the peel, adjust its shape and slide it onto the baking stone.
  6. Bake for approximately 90 seconds, turning it regularly so the crust receives the heat evenly.
  7. Remove it when the crust is well developed and the base is cooked. Finish with fresh basil and a few drops of olive oil.

Whole sea bass with peppers, lemon and herbs

Whole roasted sea bass with peppers, lemon and herbs in the Gozney Dome Gen 2

A whole fish recipe designed to make the most of the enveloping heat of the Dome Gen 2. The peppers, lemon, garlic and herbs cook in the same tray and absorb the juices from the fish.

Ingredients

  • 2 whole sea bass, cleaned and gutted.
  • 2 red peppers, cut into wide strips.
  • 2 yellow peppers, cut into wide strips.
  • 4 garlic cloves, crushed.
  • 1 lemon, sliced.
  • 1 bunch of fresh parsley or coriander.
  • Extra virgin olive oil.
  • Salt and black pepper.

Preparation

  1. Preheat the Dome Gen 2 to 250 °C.
  2. Spread the peppers in a large cast-iron tray. Add olive oil, salt and pepper, and toss them together.
  3. Pat the sea bass dry and place them on top of the peppers. Stuff the cavities with the garlic, lemon slices and some of the herbs.
  4. Drizzle the fish with olive oil and season the surface.
  5. Place the tray in the oven and roast for 20–30 minutes, turning it if one side receives a stronger flame.
  6. If the skin colours too quickly, turn off the flame and let the residual heat finish the cooking.
  7. Serve the sea bass over the roasted peppers and finish with fresh herbs, lemon and the juices from the tray.
