Neapolitan Margherita-style pizza

A classic Neapolitan pizza is a great way to put the Gozney pizza cutter to its natural use: serving. Soft dough, a thick crust, tomato, mozzarella, basil and extra virgin olive oil form a combination that is simple in its ingredients but very demanding in its preparation.

Ingredients for around 4 pizzas

For the dough

  • 580 g type 00 or 0 wheat flour.
  • 340 ml water.
  • 17 g salt.
  • 0.7 g fresh brewer’s yeast.

Note: these quantities roughly follow the proportions set by the AVPN, whose guidelines allow for between 1.6 and 1.8 kg of flour, 40–60 g of salt and 0.1–3 g of fresh yeast per litre of water.

For each pizza

  • 60–80 g of crushed peeled tomatoes.
  • 80–100 g of mozzarella.
  • A few fresh basil leaves.
  • 4–5 g of extra virgin olive oil.
  • Salt, in moderation to season the tomatoes.

1. Prepare the dough

Start with the water. Dissolve the salt, add approximately 10 per cent of the flour, and then add the yeast. Gradually add the rest of the flour whilst kneading until you have a compact, smooth and elastic dough that is not sticky to the touch.

The AVPN guidelines emphasise avoiding prolonged direct contact between the salt and the yeast. The final hydration will also depend on the absorption capacity of the flour used.

2. Proving and shaping the balls

Leave the dough to rest, covered, to prevent the surface from drying out. Then carry out the staglio, dividing it and shaping the balls by hand.

For a Vera Pizza Napoletana, the AVPN specifies balls weighing between 200 and 280 g and a total proving time of between 8 and 24 hours, depending on temperature, humidity and the behaviour of the flour.

3. Stretching the pizza dough by hand

Place a ball of dough on the work surface and press it outwards from the centre with your fingers, turning it several times. Do not use a rolling pin: the Neapolitan method aims to push the gas towards the edge to preserve the characteristic cornicione.

4. Add tomato, mozzarella and basil

Chop the peeled tomatoes by hand, leaving some texture, and spread them out from the centre in a circular motion. Add the salt and distribute the sliced mozzarella evenly.

Finish by placing the fresh basil leaves on top and drizzling the extra virgin olive oil in a spiral pattern. The European standard specifies 60–80 g of tomato, 80–100 g of mozzarella and 4–5 g of oil per pizza for this recipe.

5. Baking at Neapolitan temperature

The traditional method requires an extremely high temperature. The AVPN sets the oven temperature at approximately 430–480 °C and specifies a baking time of just 60–90 seconds. The European specification for Pizza Napoletana ETG specifies approximately 485 °C on the oven floor and around 430 °C on the dome.

During baking, rotate the pizza to ensure even cooking all the way round. It should come out soft and springy, with a raised crust and melted mozzarella, whilst the basil should not appear burnt.

6. Leave to rest for a few moments, cut and serve

A Neapolitan pizza is meant to be enjoyed straight out of the oven. Transfer it to a suitable surface for cutting and allow it to stabilise just enough to make it easy to handle.
