Gozney Dome firewood is designed for those who wish to cook with a wood fire in their Dome using a fuel specifically prepared for this type of oven. It is an option aimed at simplifying the choice of wood and facilitating more controlled fire management during cooking.

Gozney combines kiln-dried hardwood cut to a size suitable for the Dome, with properties designed to generate heat, flames and the distinctive character of wood-fired cooking. This allows the user to focus on managing the temperature and cooking pace according to each recipe.

Dried to 15% moisture content for efficient combustion

The hardwood is kiln-dried until it reaches a moisture content of 15 per cent. This process ensures the fuel is ready to deliver the heat output and combustion efficiency that Gozney seeks for the Dome.

Controlling the moisture content is particularly useful when you want to work with a consistent fuel right from the start of the session, avoiding reliance on pieces of unknown origin and drying conditions.

Cutting tailored to the Dome stove

The pieces are cut to approximately 20–50 mm × 140 mm, dimensions that Gozney considers suitable for using this wood in the Dome oven.

This format avoids the need to pre-split larger pieces to fit the kiln and provides a more uniform base for adding fuel during preheating or whilst firing continues.

Hardwood with high combustion energy

Gozney uses kiln-dried hardwood, a dense fuel that releases a high amount of energy during combustion. This characteristic makes it a fuel specifically suited to fuelling the Dome’s fire.

During a cooking session, this energy capacity allows you to use the necessary amount of wood depending on the pre-heating, the target temperature and the length of time the oven is kept in operation.

Complete combustion with low smoke

The manufacturer describes this wood as a fuel capable of providing clean, complete combustion with low smoke production. This is a particularly important quality when cooking directly over a wood fire inside the oven.

The aim is to have a fuel that is suitable for maintaining the fire properly without excessive smoke becoming the dominant feature of the session, ensuring that the focus remains on the heat, the flame and the cooking.

In addition to the heat generated by combustion, Gozney highlights this wood’s ability to produce a wide, enveloping flame. This characteristic is part of the experience of cooking in the Dome using a wood fire as a heat source.

The flame allows you to work with the unique character of this type of cooking and develop the flavour that Gozney associates with wood-fired cooking, whether in a pizza session or in other dishes cooked over an open fire in the oven.

Approximate wood consumption for planning each session

The amount of firewood used depends on the cooking method. As a guide, Gozney states that the Dome consumes around 3.5 kg of wood to heat up fully to saturation point and to cook a pizza session for an average family.

When the oven is operating at maximum temperatures, the manufacturer estimates consumption at around 2 kg per hour. These figures allow you to roughly calculate your fuel requirements before you start, particularly for extended sessions.

They should not be interpreted as a fixed number of uses per bag: actual consumption will vary depending on how the oven is heated, the temperature maintained and the duration of each session.

First use

If you are lighting the Dome for the first time or it has not been used for a long period, Gozney recommends first carrying out a gentle curing fire for around 30 minutes. Start with a small fire and avoid turning the oven straight up to maximum heat.

Gozney firewood has already been kiln-dried and is ready for use as fuel. To light it, use a natural wood shavings or tinder lighter. Lighters are not included with the firewood.

During lighting and cooking

  1. In the centre of the cooking surface, form a small, criss-crossed pile with 8 pieces of firewood.
  2. Place a natural firelighter at the bottom of the stack and light it.
  3. Wait until the wood has caught fire properly and move the fire towards the left-hand side of the oven.
  4. Gradually add more logs to maintain a continuous, enveloping flame whilst the Dome heats up.
  5. After approximately 30 minutes of burning or when the desired temperature is reached, Gozney recommends moving the fire to the right-hand side to begin cooking.

After cooking

Firewood consumption will depend on the temperature, duration and type of cooking. Add fuel only as required to maintain the fire and the temperature needed for the dish.

Once the cooking session is over, allow the Dome to cool completely before moving or covering it. Do not handle the oven as if it were cold whilst it still retains residual heat.

Maintenance

For lighting the fire, Gozney recommends natural firelighters made from wood shavings or tinder and advises against using conventional kerosene- or resin-based firelighters with its products.
