The Gozney Dome Gen 2 door is designed for those who wish to expand the capabilities of their Dome oven and work with techniques that require a more controlled chamber. It is an accessory specific to the new generation and is available in a version for the Dome Gen 2 and another for the Dome XL Gen 2.

1. Check that you have the correct door

Coriander roast chicken with radicchio in the Dome Gen 2 using gas

This recipe uses the Dome Gen 2 gas burner to preheat the oven and brown the chicken, then uses the door with the burner completely switched off to finish cooking with the heat retained inside the oven.

Serves: 4 Preparation: 15 minutes Cooking: 40–55 minutes

Ingredients

For the chicken

  • A handful of coriander, including the roots, chopped
  • 7 garlic cloves
  • 200 g unsalted butter, softened
  • Salt
  • 3 tablespoons ground white pepper
  • 1 whole chicken, approximately 1.5 kg

For the radicchio

  • 1 radicchio, quartered
  • Olive oil
  • Salt

For the dressing

  • 3 tablespoons chilli jam
  • A pinch of salt
  • 1 teaspoon palm sugar
  • 1 tablespoon lime juice
  • 1 tablespoon fish sauce

To finish

  • Crispy shallots
  • Mint leaves

Preparation

1. Preheat with gas

Light the gas burner and bring the Dome Gen 2 to approximately 180 °C, keeping the flame low. Crush the coriander and garlic and mix them with the softened butter, salt and white pepper. Carefully loosen the skin from the chicken and spread the flavoured butter underneath.

2. Brown the chicken

Place the chicken in a cast-iron pan and put it into the oven. Cook with the burner lit until the skin develops a good colour.

3. Turn off the gas before fitting the door

Once the chicken is browned, turn off the burner completely and set the gas control knob to the off position. Only then fit the Gozney Dome Gen 2 Door. Never use the door while the gas burner is lit.

4. Finish cooking with the retained heat

With the burner switched off and the door closed, leave the chicken inside the oven for 20–30 minutes. Check the internal temperature of the meat. If necessary, continue cooking for another 10–15 minutes, until the internal temperature reaches 73 °C.

5. Roast the radicchio

Place the radicchio quarters in a cast-iron pan, add olive oil and salt, and roast for 10–15 minutes, until lightly charred and tender.

6. Prepare the dressing

Mix the chilli jam, salt, palm sugar, lime juice and fish sauce until you have a smooth dressing.

7. Serve

Serve the chicken with the radicchio, spoon the dressing over the top and finish with the crispy shallots and mint leaves.

  • 1 bone-in lamb shoulder, approximately 2 kg
  • A generous bunch of long fresh rosemary sprigs
  • 4 onions, halved
  • 1 red chilli, halved
  • A handful of thyme sprigs
  • 2 heads of garlic, halved
  • Oil
  • Salt
  • Roasted vegetables and roast potatoes to serve

Preparation

1. Slow-cook the lamb

Preheat the Dome XL Gen 2 to 170 °C. Season the lamb shoulder generously with salt, rub it with a little oil and place it in a cast-iron pan or tray.

Cover the pan tightly with aluminium foil, place it in the oven and fit the door. Cook for 2½–3 hours, until the meat is tender and begins to pull away from the bone.

2. Brown the surface

Remove the tray and increase the oven temperature to 300 °C. Temporarily remove the lamb, place the onions, chilli, thyme and garlic in the tray, add oil and salt, then place the meat back on top.

Return the tray to the oven for 8–10 minutes, turning the lamb as necessary to achieve deep, even browning.

3. Prepare the embers

Reduce the oven temperature again to approximately 170 °C.

Before fitting the door, make sure there is no active flame. When cooking with wood or charcoal, the Gozney Dome XL Gen 2 Door should only be used with embers.

4. Smoke with rosemary

Place the rosemary sprigs directly onto the embers and close the door.

Allow the lamb to absorb the aromatic smoke for 10–15 minutes, while the vegetables finish cooking and the chamber fills with the aroma of rosemary.

5. Serve

Allow the meat to rest briefly, then pull it apart with a fork. Serve hot with the vegetables from the tray and some roast potatoes.
