The Gozney Dome Gen 2 door is designed for those who wish to expand the capabilities of their Dome oven and work with techniques that require a more controlled chamber. It is an accessory specific to the new generation and is available in a version for the Dome Gen 2 and another for the Dome XL Gen 2.
The door is specifically designed to enhance the performance of the Dome Gen 2 oven, providing better heat retention, smoke and steam control, and suitability for longer cooking times and techniques such as baking, hot smoking or slow roasting.
The features described below are available on both versions. Choose the Dome Gen 2 version if you have that oven, or the Dome XL Gen 2 version if you use the XL model.
Double-walled

The door provides an insulated double-walled construction, designed to improve heat retention when using the Dome Gen 2 or the Dome XL Gen 2.
When combined with the thick stone and the oven’s own insulation, this helps to create a cooking environment better suited to dishes that need to remain inside the Dome for longer.
This is a particularly useful advantage when the aim is no longer quick, open cooking, but rather longer cooking processes inside the oven chamber.
Smoking, roasting and baking

Gozney has designed this door specifically to extend the use of the Dome to include baking, hot smoking and slow roasting.
These techniques make use of the door in conjunction with the oven’s ability to retain heat, creating conditions different from those of a fully open oven.
Thus, the Dome can be used for preparations requiring longer cooking times and different management of the internal environment, in addition to its usual high-temperature applications.
Greater control over smoke and steam

By closing the oven opening with the door, Gozney explains that it is easier to control the temperature and the amount of smoke or steam present inside the Dome.
This control is particularly useful for cooking methods where the atmosphere inside the chamber is part of the cooking process, such as smoking, slow roasting or certain types of baking.
The door provides a specific tool for managing the oven’s internal environment.
Openings for meat probes

The door features dedicated openings to allow meat probes to pass through whilst the accessory is in use.
This allows you to make use of the Dome system’s probes during prolonged cooking sessions without having to remove the door to route their cables out of the chamber.
This integration is particularly well-suited to roasts and other cooking methods where it is important to monitor the internal temperature of the food.
Cooking over embers, without an open flame

The door is designed to integrate with different types of cooking within the Dome, adapting to use with either wood or charcoal as well as a gas burner.
When cooking with firewood or charcoal, using embers helps stabilise the heat inside the oven and creates a more controlled environment, ideal for prolonged cooking and roasting or smoking techniques.
When using gas, the door should only be fitted when the burner is switched off, which transforms the Dome into a more enclosed and efficient environment for retaining heat and better managing the internal atmosphere.
This flexible system allows the door to be utilised for different cooking styles, whilst always maintaining control over the process and optimising the oven’s performance according to the technique used.
Aromatic smoke inside the oven

Gozney recommends using the bed of embers to infuse flavours during cooking, for example by adding rosemary directly onto the embers to scent the interior of the oven.
The door helps to work with this smoke inside the Dome and turns smoking into a technique to experiment with, going beyond simply retaining heat in the oven.
This is a particularly interesting application for those who wish to explore the flavours of cooking over an open fire and use aromatic herbs as an active part of the preparation.
304 stainless steel and acacia handle

Gozney manufactures the door from 304 stainless steel with a ceramic coating and completes the design with an acacia wood handle.
The metal construction forms part of the accessory’s double-walled structure, whilst the acacia handle creates a grip that is clearly distinct from the body of the door.
The result maintains the signature use of materials and finishes characteristic of the fittings developed specifically for the Dome Gen 2 range.
