  3. Always install the oven before starting the preheating process.
  4. Place the stone inside the oven carefully: it is fragile and may break if dropped.
  5. Use the required combination of adjustment panels to cover as much of the open space around the oven as possible.

On Masterbuilt Gravity Series barbecues, installation requires removing the relevant cooking grids, positioning the heat deflectors according to the manufacturer's instructions, installing the oven and stone, and filling the remaining open space with the appropriate panels. On gas or pellet barbecues, the arrangement differs, so the specific installation procedure given in the manual should be followed.

During use

  • Always use heat-resistant gloves whenever you need to interact with the oven.

A Margherita pizza is a simple way to try the Masterbuilt pizza oven for the first time and see how the stone and 360° airflow work together. With only a few ingredients, the focus remains on the dough, tomato and the final bake.

You can prepare a pizza up to 35 cm in diameter, although it is best to keep the size manageable enough to launch and remove comfortably with the peel.

Ingredients

  • Pizza dough.
  • Crushed tomatoes or pizza tomato sauce.
  • Mozzarella.
  • Fresh basil leaves.
  • A little olive oil, applied to the pizza without allowing it to drip onto the stone.
  • Cornmeal to help the dough slide onto the stone.

1. Prepare the pizza

Stretch the dough on a lightly floured surface until it reaches the desired thickness. Add a thin layer of tomato and distribute the mozzarella without overloading the centre.

Finish with the basil and, if desired, a small amount of olive oil. The pizza should be able to slide easily from the peel onto the stone.

2. Preheat according to your barbecue

Masterbuilt Gravity Series: install the oven before lighting the barbecue and preheat with the lid closed at between 290 and 370 °C. Masterbuilt recommends working towards the lower end of the range for thicker dough and the higher end for thinner dough.

Compatible gas barbecue: install the oven according to the instructions, set the burners to HIGH and preheat for approximately 15 minutes with the lid open. Then launch the pizza and cook with the lid closed.

Compatible pellet barbecue: set the barbecue to the highest temperature available; Masterbuilt recommends reaching around 260 °C where possible. Preheat with the lid closed and the oven already installed.

3. Transfer the pizza to the stone

Sprinkle a small amount of cornmeal on the base or peel to help the pizza slide. Launch the pizza using a long-handled peel, taking care not to touch the oven or stone, as both reach very high temperatures.

4. Cook without rotating

Gravity Series: cook for approximately 3–5 minutes with the lid closed.

Gas: cook on HIGH for approximately 3–5 minutes with the lid closed.

Pellet: cook for approximately 5–8 minutes with the lid closed.

Thanks to the 360° airflow, there is no need to rotate the pizza during cooking. These timings are approximate and may vary depending on the barbecue, weather conditions, dough thickness and the result you are aiming for.

5. Remove and serve

Once the dough is cooked and the cheese has reached the desired finish, remove the pizza with a long-handled peel. Leave it to rest briefly before slicing, then serve while it still has its freshly baked texture.
