Ingredients (serves 3-4)


For the cauliflower:


  • 1 large cauliflower cut into 2 cm thick slices (large florets can also be used)

  • 2 tablespoons ground coffee

  • 1 tablespoon brown sugar

  • 1 teaspoon smoked paprika

  • 1 teaspoon garlic powder

  • ½ teaspoon cumin

  • 1 teaspoon fine salt

  • 2 tablespoons olive oil


For the sauce:

Use the same recipe as for the spicy honey sauce, although you can adjust the level of spiciness to taste.

Preparation


1. Marinate the cauliflower:

Combine the coffee, sugar, spices and oil in a bowl. Coat each piece of cauliflower well. Leave to rest for at least 30 minutes to absorb the flavour.

  • Medium-high heat (180-200 °C).

  • Place the pieces on a clean grill or griddle and oil well.

  • Cook on both sides until seared and tender inside (approx. 10-12 minutes per side).
