A protein-rich recipe, with a balance between the sweetness of the BBQ sauce and the freshness of the toppings. Perfect for quick dinners at sunset or lunches between excursions. Ingredients (serves 4):
  • 500 g chicken breast, cut into thick strips
  • 2 heaped tablespoons American-style BBQ sauce (smoky or sweet, according to preference)
  • 1 tablespoon extra virgin olive oil
  • Sea salt and freshly ground black pepper to taste
  • 8 small corn tortillas
  • ½ red onion, thinly sliced and pickled with lemon or apple cider vinegar
