The Gozney wood-fire control kit is designed to help you get the most out of cooking over an open fire in second-generation Dome ovens. It combines an air control module with a log grate, allowing you to manage the combustion much more precisely without losing the character of cooking with wood or charcoal.

It’s a particularly useful accessory if you want to use your Dome for more than just pizza: roasts, meats, dishes with a smoky flavour, or slow cooking with charcoal are all among the possibilities Gozney offers with this system.

The system works directly on one of the key factors of the fire: the air it receives. This allows you to stoke the flame when needed, maintain a more controlled burn and focus more on cooking than on constantly adjusting the fire.

Precise air control to master the fire

The control module allows you to regulate the flow of air feeding the fire. Rather than relying solely on how you arrange the firewood or on opening and closing the oven to adjust the combustion, you can directly control the amount of air the fire receives.

This control makes it easier to work with a livelier flame when you’re looking for intensity, or to maintain a more moderate burn when the recipe requires time. It’s particularly useful for dishes where the stability of the fire is just as important as reaching the right temperature.

The result is a more controlled way of cooking with solid fuel, maintaining the flavour and experience of a real fire whilst providing an additional tool to manage it with precision.

Boost mode to instantly stoke the flame

When the fire needs a boost, Boost mode runs the fan at 100% power for one minute after pressing the button. This extra supply of air is designed to quickly intensify the combustion without having to constantly tend to the wood.

It can be particularly useful when building up a more intense flame or when you want to reignite the fire whilst cooking. The system acts precisely where the combustion needs it: by temporarily increasing the available oxygen.

You can then return to a more moderate setting and continue to control the fire according to the dish you’re preparing. It’s not simply a matter of generating more power, but of having an immediate response when the flame requires it.

Raised grate to allow the wood to breathe better

The thick stainless-steel grate keeps the firewood raised above the stone surface. This allows air to circulate around a larger portion of the wood rather than being confined to the top or sides.

Gozney uses this design to achieve a more even flow of air towards the wood, promoting a richer flame and better fire performance. At the same time, the grate helps to keep some of the combustion residues away from the cooking surface.

It is a simple solution, but it works in conjunction with the ventilation module: the grate creates space for air to circulate, whilst the control allows you to decide how intensely you want to feed the fire.

Firewood or charcoal for cooking more than just pizza

The system is designed for cooking with both wood and charcoal. This opens up the possibility of using the Dome Gen 2 as a much more versatile wood-fired oven, allowing you to choose the fuel based on the type of cooking and the result you’re aiming for.

With wood, you can prepare recipes that benefit from an active flame and the aromatic contribution of wood smoke. With charcoal, Gozney also suggests slow and prolonged cooking – a particularly interesting option for expanding your repertoire to include roasts and dishes that require more time.

That’s why the kit makes sense even if it was pizza that first drew you to the Dome: it’s designed to help you get the most out of the oven when you want to cook meat, roasts and other dishes directly over an open flame.

Interchangeable USB-C batteries to keep cooking

The module runs on Gozney’s rechargeable, interchangeable batteries, and the kit includes two units. They are recharged via USB-C, so you don’t need to keep the module connected by cable whilst you’re using the oven.

According to Gozney, a battery can provide approximately 28 hours of runtime on the Low setting and around 3.5 hours on Max. The actual runtime will therefore depend on how intensely you use the fan during each cooking session.

As they are interchangeable, you can swap one battery for another whenever you need to and continue using the system. This is particularly handy for outdoor cooking, where avoiding cables around the oven makes installation much simpler.

Designed for the Dome Gen 2 and Dome XL Gen 2

This kit is specifically designed for the Gozney Dome (Gen 2) and Dome XL (Gen 2) ovens. It is important to bear the generation in mind, as the official compatibility specified by Gozney applies to these two models and should not automatically be extended to earlier versions of the Dome.

The module and the grate form part of this generation’s solid-fuel cooking system. If you already own one of these ovens, the kit allows you to add airflow control; if you are setting up a Dome Gen 2 from scratch, you can include it as part of the equipment for regular use with firewood or charcoal.

First use

  1. Check that the wood rack supplied with the kit is fitted before using the control module. Gozney specifically states that the module must not be operated without it.
  2. Also check that the Dome Gen 2 flue grate is correctly installed before lighting wood or charcoal.
  3. If this is the first firing of the oven itself, increase the temperature gradually to reduce the risk of thermal shock to the stone.
  4. During this first firing with solid fuel, maintain a moderate fire for 30–60 minutes.

Suitable fuel

  • Wood: use kiln-dried hardwood. Gozney recommends small pieces approximately 14 cm long and between 2 and 5 cm thick.
  • Wood moisture content: between 10% and 20%, with an indicated optimum value of 16%.
  • Avoid: softwoods or resinous woods, freshly cut wood, treated wood, painted wood or stained wood.
  • Charcoal: Gozney recommends high-quality natural restaurant-grade charcoal made from hardwood, or completely dry binchotan.
  • Do not use: briquettes with additives, self-lighting charcoal, damp charcoal or reclaimed charcoal.

During cooking

  1. To light the oven with wood, start with a small fire in the centre of the oven using a natural, odourless firelighter.
  2. Build the fire gradually. Once it is well established, move it to the right-hand side, over the flue grate.
  3. Use the control module dial to adjust the airflow according to the combustion intensity you need.
  4. If you need to temporarily increase the intensity of the fire, use Boost mode, which runs the fan at 100% for approximately one minute after activation.
  5. Do not overload the fire. The flame may travel across the top of the oven, but it must not extend out of the oven opening.
Important: do not use flammable liquids, petrol, lighter fluid or unauthorised fuels to start or intensify the fire.

After cooking

  1. Allow the fire to burn down until the flames have completely disappeared and only embers remain.
  2. Do not remove the ash assuming that it is already cold. Gozney warns that it may retain heat for up to 24 hours afterwards.
  3. Remove it only with a non-combustible tool.
  4. Place the ash in a metal container with a tightly fitting lid and keep it in a safe location until it has cooled completely.

Cleaning

Inside the oven

  • Gozney recommends removing food residue and soot using the oven's self-cleaning cycle: maintain a temperature above 343 °C for approximately 3 hours.
  • If any residue remains after cooling, use a soft brush without applying excessive pressure.
  • Loose debris can be removed with a vacuum cleaner fitted with a plastic attachment.

Rack and control module

The official documentation reviewed does not provide a separate cleaning procedure for the electronic module or the Wood-Fire Control Kit rack. For any specific work on these components, follow the Quick Start Guide supplied with the kit and avoid using cleaning methods that have not been specified by Gozney.

Maintenance and storage

  • Before each new solid-fuel cooking session, check that the wood rack and flue grate are correctly fitted.
  • Always use suitable, dry fuel to reduce smoke, residue and poor combustion.
  • When the oven is not in use, Gozney recommends keeping it covered and protected from rain.
  • Do not place a cover directly over the oven until it is completely cold.
  • After an extended period without using the Dome Gen 2, Gozney recommends repeating the first-firing procedure.

Low & slow smoked pulled pork in the Gozney Dome Gen 2

If there is one recipe that really shows the value of fire control during a long cook, it is a good smoked pulled pork. Here, the aim is not to create an aggressive flame, but to keep the Dome working for hours at a low temperature while smoke, charcoal and time transform a cut of pork into tender meat that pulls apart easily.

This preparation is based on Gozney's official Dome recipe and makes particularly good use of the Wood-Fire Control Kit's adjustable airflow control.

Cooking time: approximately 7–9 hours Resting time: at least 1 hour Serves: approximately 8–10 Cooking temperature: 110–130 °C

Ingredients

  • 1 pork shoulder, pork butt style, approximately 2.8 kg, skin removed and excess fat trimmed.
  • 2–3 tablespoons American mustard.
  • 2 generous handfuls of pre-soaked hickory wood chips.
  • Water or apple juice for spraying.
  • BBQ sauce to taste, for finishing.

For the rub

  • 1 tablespoon brown sugar.
  • 1 tablespoon smoked paprika.
  • 1 teaspoon garlic powder.
  • 1 teaspoon blackened seasoning.
  • 1 tablespoon salt.
  • 1 tablespoon black pepper.

1. Prepare the meat the day before

Pat the pork dry. Mix all the rub ingredients together and coat the meat with a thin layer of mustard. Then distribute the seasoning evenly over the entire surface, making sure it adheres well.

Cover the meat and leave it in the refrigerator overnight. This ensures it is well seasoned before going into the oven for a cook that will last several hours.

2. Prepare the Dome for low & slow cooking

Light the Dome with hardwood and initially bring the oven to approximately 350 °C. Once the wood has burned down to embers, add charcoal and allow the fire to gradually reduce in intensity until the oven stabilises.

Target: maintain a cooking temperature between 110 and 130 °C.

This is where the Gozney Wood-Fire Control Kit comes into play. Use the control dial to gradually increase or reduce the airflow feeding the fire until you achieve stable combustion. There is no universal dial position for reaching a specific temperature: the amount of fuel and the conditions of each cook also have an effect.

3. Smoke slowly for around 4 hours

Place a rack over a tray suitable for high temperatures and pour approximately 700 ml of water into the tray. Position the pork on top with the fat side facing upwards and insert a temperature probe into the thickest part of the meat.

Add the hickory wood chips to the embers and place the meat in the Dome. Maintain the temperature between 110 and 130 °C, monitoring the fuel and using the airflow control to adjust combustion whenever necessary.

Cook for approximately 4 hours, until the internal temperature of the meat reaches around 62 °C.

4. Wrap and continue cooking for another 3–5 hours

Remove the meat from the oven and spray the surface generously with water or apple juice. Wrap the pork completely in aluminium foil and reinsert the temperature probe.

Return the wrapped pork to the Dome and continue cooking slowly for another 3–5 hours, maintaining the same low-temperature environment.

Reference internal temperature: approximately 96 °C at the centre of the meat.

More important than aiming for an exact cooking time is ensuring that the meat becomes extremely tender. During a cook like this, time allows the connective tissue to break down until the pork can be pulled apart easily.

5. Rest before pulling

Once the meat is ready, remove it from the oven without taking off the aluminium foil. Gozney also recommends wrapping the package in thick towels and allowing it to rest for at least 1 hour.

Then open the package, pull the meat apart and mix it with its own juices. Finish with your preferred BBQ sauce and serve immediately.

The secret is controlling the fire

A 7–9 hour cook is exactly the kind of preparation where the ability to control airflow becomes especially valuable. The aim is not to create a large flame, but to maintain stable combustion and feed the fire only when necessary.

If the fire temporarily loses intensity, Boost mode can provide a short increase in airflow. For the rest of the low & slow cook, the key is to make gradual adjustments and maintain stability within the target temperature range.

The result: hours of smoke and real fire transform a large cut of pork into juicy, smoky pulled pork that falls apart with ease.

Important: Gozney's original recipe uses the Dome door during cooking. On the Dome Gen 2, the corresponding door is a separate accessory and is not included with the Wood-Fire Control Kit.
