- 2 tbsp coarse salt
- 2 tbsp ground black pepper
- 2 tbsp garlic powder
- 2 tbsp rosemary, dried or freshly chopped
- 2 tbsp dried thyme
- 80 g butter
- 3 garlic cloves
- 1 tbsp Dijon mustard
- Oak or mesquite wood chips for smoking
Step-by-step preparation
1. Preparing the cut
- Trim the picanha, leaving the outer fat cap intact.
- Mix the salt, pepper, garlic powder, rosemary and thyme, and rub generously over all sides of the meat.
