MEATER Block — Mixed grill for four cuts

Block is your control tower: four probes, a standalone display, and the freedom to scale a complete meal. The key is to stagger the start times and targets so that everything comes out hot and ready at the same time.

Steps to follow

  1. Design zones: direct heat for searing and one or two indirect zones for raising internal temperatures.
  2. Assign names to the probes (Salmon, Chicken, Pork, Beef) on the block to avoid confusion.
  3. Insert:
    • Salmon (loin): centre of the fillet.
    • Chicken breast: thickest part.
    • Pork loin: centre.
    • Entrecôte: side to the centre.
  4. Guideline targets:
    • Salmon: 50–54 °C (juicy).
    • Chicken: 74 °C.
    • Pork: 63–65 °C.
    • Entrecôte (medium rare): 53–55 °C.
  5. Strategy: start with pork + chicken on indirect heat; sear and finish the entrecôte at the end; add the salmon last so it doesn't overcook.
  6. Resting times: 5–10 minutes for red meat; 3–5 minutes for pork and chicken; salmon can go straight to the plate.

Vegetarian variation — ‘4 probes’ grilled large vegetables

Idea: use large pieces that can be probed and different cooking times to coordinate service.

Steps

  1. Pieces: whole cauliflower, half a butternut squash, whole sweet onions and hasselback potatoes.
  2. Probes: one per piece (cauliflower heart, thick part of the butternut squash, centre of an onion, heart of a potato).
  3. Environment: 180–200 °C on a grill/in an oven with a lid.
  4. Objectives:
    • Cauliflower: 92–96 °C internal temperature.
    • Butternut squash: 92–95 °C.
    • Onions: 98–100 °C (sweet).
    • Potatoes: 98–99 °C (tender).
  5. Finishing: sear under the grill if you want extra colour and finish with chimichurri or herb butter.

MEATER Pro Duo — Whole turkey (breast + thigh cooked to perfection)

Turkey is a classic two-zone dish: the breast is perfect at a lower temperature than the thigh. With two probes, Pro Duo monitors both and guides you to remove it at the exact moment without drying it out.

Steps to follow

  1. Dry and season: let the skin dry thoroughly and season in advance (ideally with a dry brine for 12–24 hours).
  2. Preheat: oven or closed grill to 170–185 °C ambient temperature.
  3. Probes: one in the breast (centre), another in the thigh (close but not touching the bone).
  4. Cooking: place the turkey on a tray or rack with the wings protected. Use the readings to avoid overcooking.
  5. Objectives: remove when the breast reaches 66–68 °C and the thigh 74–78 °C.
  6. Resting: 20–30 min before carving for balanced juices.

Vegetarian variation — Stuffed pumpkin ‘double roast’ + lentil bread

Idea: use two probes to monitor a stuffing and a pumpkin separately, emulating the two zones of the turkey.

Steps

  1. Mix a lentil ‘bread’ (cooked lentils, oats, onion, herbs) and form a compact roll.
  2. Cut a butternut squash in half and remove the seeds; brush with oil and salt.
  3. Insert one probe into the centre of the roll and another into the thickest part of the squash.
  4. Bake/smoke at 175 °C until the roll reaches an internal temperature of 75–78 °C and the squash reaches 92–95 °C.
  5. Let rest for 10–15 minutes, slice and serve with vegetable gravy.

MEATER Pro — Steak with intense searing

When you're looking for a powerful crust and a juicy centre, you need direct heat and internal control. MEATER Pro tolerates very high temperatures and shows you in real time when to remove the meat from the heat to achieve your preferred doneness.

Steps to follow
  1. Preheat to maximum: grill at maximum temperature (hot plate or hot iron).
  2. Prepare the cut: dry thoroughly, season generously and, if desired, add pepper at the end to avoid bitterness.
  3. Probe inside: insert into the centre of the loin, from the thickest side.
  4. Sear: 60–90 seconds per side over direct heat to form a crust; if the piece is thick, sear the edges as well.
  5. Finish: move to indirect heat and let the internal temperature rise to your target:
    • Rare: 50–52 °C
    • Medium rare: 53–55 °C
    • Medium: 56–58 °C
  6. Resting time: 5–10 min. Slice against the grain and serve.

Vegetarian variation — Grilled cauliflower ‘steak’

Idea: thick slices of cauliflower with a golden crust and tender centre, perfect for searing.

Steps

  1. Cut the cauliflower into 3–4 cm “steaks”, keeping the stalk intact so that it does not fall apart.Brush with oil, salt, cumin and paprika.
  2. Insert the probe into the centre of the thickest fillet (enter diagonally if necessary).
  3. Sear directly for 2–3 minutes on each side; step to indirect until the internal temperature reaches 92–95 °C.
  4. Finish with a squeeze of lemon or chimichurri sauce.

MEATER Plus — Low & slow BBQ ribs

The essence of ‘low & slow’ is cooking at a low temperature for a long time to break down collagen and retain juices. MEATER Plus shines here: the internal sensor guides the meat to perfection and the ambient sensor helps you maintain a stable environment (smoker, kettle or oven) without exceeding its limits.

Steps to follow

  1. Prepare your equipment: stabilise your grill/smoker/oven to an ambient temperature of 110–120 °C. Place a tray of water if you want stable humidity. Season: remove the membrane from the ribs, apply your rub on all sides and let it rest for 30–60 minutes. Insert the probe: place the tip in the meaty part between two bones (without touching them). Place the base with the repeater near the equipment. Start: cook in the indirect zone with the ambient sensor away from the direct heat source. Curve control: when the internal temperature is around 72–76 °C, spray (if desired) with apple juice or water to keep the surface flexible.
  2. Wrap (optional): at an internal temperature of 74–78 °C, wrap in aluminium foil or butcher paper for a juicier result and to speed up the ‘stall’.
  3. Target: cook to an internal temperature of 88–95 °C; allow to rest as suggested.
  4. Glaze: brush with BBQ sauce and cook for 10–15 minutes to set.
  5. Resting and serving: rest for 15–20 minutes, cut between bones and serve.

Vegetarian variation — Whole BBQ-glazed cauliflower

Idea: reproduce the look and feel of a ‘low and slow’ roast with whole cauliflower, combining mild smoke and a final glaze.

Steps

  1. Preheat to 150–170 °C ambient temperature.
  2. Remove leaves, trim the stalk so it sits flat. Brush with oil, salt, pepper and your BBQ spices.
  3. Insert the probe into the central stalk (heart).
  4. Cook using indirect heat until the internal temperature reaches 92–96 °C (tender but firm).
