This version retains the intense, smoky flavours of the original dish, but uses aubergine as the main ingredient. The meaty texture of the aubergine combined with the herb butter and feta cheese offers a delicious and satisfying alternative.
Ingredients (serves 2):
- 2 large aubergines
- 1 tablespoon coarse salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 80 g crumbled feta cheese
- 100 g unsalted butter
- 2 cloves garlic, minced
- 1 teaspoon fresh rosemary, minced
- 1 teaspoon chopped fresh thyme
- 4 medium potatoes
- 2 tablespoons extra virgin olive oil
- 1 pinch of salt and pepper for the potatoes
- A few fresh basil leaves (optional)
Preparation:
- Prepare the aubergine: Wash the aubergines thoroughly and cut them into thick slices (approximately 2 cm thick). Sprinkle coarse salt on top and let stand for 20 minutes to remove the bitterness. Then rinse and dry them with kitchen paper.
