This recipe highlights the versatility of the accessories included in the OFYR Winter Box, allowing you to cook a flavourful stew, ideal for cold days. Ingredients:
  • 1.5 kg pork ribs, cut into pieces
  • 3 large potatoes, diced
  • 3 carrots, sliced
  • 2 red peppers, cut into strips
  • 1 courgette, thickly sliced
  • 4 cloves of garlic, crushed
  • 2 large onions, chopped
  • 2 cups of chicken stock
  • 1 cup of white wine
  • Fresh rosemary and thyme to taste
  • Salt and pepper to taste
  • Olive oil
Preparation:
  1. Light the OFYR grill: Prepare the fire in your OFYR grill for direct and indirect cooking. Use the OFYR Ø100 fire extinguisher lid to control the heat while you organise the ingredients.
  2. Brown the pork ribs: Place a cast iron pan over direct heat. Add a little olive oil and, when hot, brown the pork ribs with the pro spatula until they are well sealed on all sides. Remove the ribs and set aside.
  3. Sauté the vegetables: In the same pan, add a little more oil if necessary and sauté the onions, garlic, and carrots until golden brown and fragrant. Use the spatula to stir the ingredients evenly.
  4. Add potatoes and stock: Add the potato cubes, pepper strips and courgette slices to the casserole dish. Stir well and then add the browned ribs. Pour the white wine and chicken stock over the mixture. Season with salt, pepper, rosemary, and thyme. Cover the casserole dish and place it in an indirect heat zone on the grill.
  5. Slow cooking over indirect heat: Cook the stew over low heat for 1.5 to 2 hours, checking on it occasionally. Use the lid to regulate the heat, and make sure the liquid does not evaporate completely; add more stock if necessary.
