Neapolitan Marinara pizza

Marinara allows the dough and the bake to take centre stage. Without mozzarella, it combines tomato, garlic, oregano and olive oil to clearly show the development of the cornicione and the effect of a short, intense bake.

  6. Leave to ferment for 18 to 24 hours at a controlled temperature or under refrigeration, then adjust the final time at room temperature accordingly.
  7. Before shaping the pizza, check that the dough is relaxed and easy to stretch.

  • 90 g crushed tomato or pizza tomato
  • 1 small garlic clove, thinly sliced
  • Dried oregano to taste
