Picanha is one of the most prized cuts in the world of barbecuing due to its juiciness and layer of fat, which melts to give it an unrivalled flavour. In this recipe, we combine perfect barbecue cooking with a herb and garlic-flavoured butter that will enhance every bite.

Ingredients (serves 4)


For the meat

  • 1 piece of picaña (approximately 1 kg)

  • 2 tablespoons coarse salt or barbecue salt

  • 1 tablespoon ground black pepper

  • 1 teaspoon smoked paprika

  • 1 teaspoon garlic powder


For the herb butter

  • 100 g unsalted butter at room temperature

  • 2 cloves garlic, finely chopped

  • 1 tablespoon fresh parsley, chopped

  • 1 tablespoon fresh thyme, chopped

  • 1 teaspoon lemon juice
