Organise the order of the dishes and adapt the batches to the condition of the embers. Check during the session whether you need to add fuel to continue with your menu.

Holm oak from the Extremaduran dehesa

Legua links this holm oak charcoal to the Extremaduran dehesa and its tradition of artisanal production.

This provenance offers a selection criterion for those who value knowing the origin of the fuel they use on their barbecue.

Preparation in around 20 minutes

The manufacturer recommends waiting around 20 minutes before starting to cook, following their lighting method. This serves as a guide for coordinating the preparation of the charcoal with that of the menu.

Use this time to get your ingredients and utensils ready. The time is approximate: check that the embers are ready for cooking and follow your barbecue’s instructions.

For lamb, fish and rice dishes

Legua recommends this charcoal for lamb, fish and fish-based rice dishes. Three suggestions to add variety to your barbecued meals.

Choose your recipe and get the right utensils ready: a grill for your roasts or a suitable container for cooking rice over the embers. Decide on your menu and enjoy preparing each dish!

Using and storing XXL holm oak charcoal

For guidance only; this does not replace the official manual. Follow the instructions on the packaging and those provided by your barbecue manufacturer.

1. First use and lighting

  1. Use charcoal outdoors only, in a stable barbecue positioned on a level surface, away from combustible materials. Never light it indoors.
  2. Add the amount of charcoal permitted by your barbecue's manual. Arrange it in a small pyramid, leaving gaps between the pieces to allow air to circulate.
  3. Light using firelighter cubes or other products specifically designed for lighting barbecues, following their instructions. Do not use petrol or spirit-based fuels.
  4. Legua suggests approximately 20 minutes as a guide to preparation time. Wait until the charcoal is glowing and has developed a light coating of ash before placing food on the grill; the condition of the fuel should determine when you start cooking.

2. During cooking

  • Keep an eye on the barbecue while it is in use and keep children and pets away.
  • Handle the fuel using long-handled tongs and suitable barbecue gloves. Adjust the air vents, if fitted, following your barbecue's manual.
  • Do not add lighter fluid to hot or burning charcoal.

3. After use

  • Extinguish the charcoal following your barbecue's shutdown procedure. On models with a lid and air vents designed for this purpose, closing the vents will smother the embers.
  • Wait until the charcoal is completely extinguished and the barbecue is cold before moving it, covering it or removing any residue.

4. Cleaning

  • Only remove ashes once they are completely cold. A build-up of ash can restrict airflow and retain moisture.
  • Clean the cooking grate, ash catcher and fuel container in accordance with your barbecue's instructions, using methods suitable for its materials.

5. Fuel care

Before each use, check that the charcoal is dry and in good condition. Legua recommends not reusing charcoal from previous cooking sessions or using fuel affected by adverse weather conditions.

6. Storage

  • Store unused charcoal in a dry place, protected from rain and moisture.
  • Close the bag securely after taking out the amount you need and keep it away from fire and heat sources.

Rosemary and lemon lamb chops grilled over XXL holm oak charcoal

Enjoy golden grilled lamb chops with a simple garlic, rosemary and lemon marinade. A recipe to prepare with your XXL Holm Oak Charcoal - Legua and share around the barbecue.Serves 4 · Preparation: 10 minutes · Approximate cooking time: 9–11 minutes · Resting time: at least 3 minutes. Allow additional time to light the barbecue.Ingredients
  • 8 lamb chops, approximately 3 cm thick.
  • 30 ml extra virgin olive oil.
  • 2 garlic cloves, finely chopped.
  • 1 teaspoon chopped fresh rosemary.
  • 1 lemon.
  • Salt and black pepper to taste.
Method
  1. Prepare the marinade. Mix the oil with the garlic, rosemary and lemon zest. Add salt and pepper, coat the chops on both sides and keep them refrigerated while you prepare the barbecue.
  2. Arrange the coals. Light the charcoal following your barbecue's instructions. Set up a medium direct heat zone, aiming for 180–230 °C on barbecues with temperature control. Leave another area with no coals underneath so you can move the meat away if flare-ups occur.
  3. Grill the chops. Place them over direct heat and cook for approximately 9–11 minutes in total, turning halfway through. If your barbecue has a lid, keep it closed between checks.
  4. Check the internal temperature. Before removing the chops, check that they have reached at least 63 °C in the thickest part, without touching the bone with the probe. The thickness of the chops and the heat of the coals may affect the cooking time required.
  5. Rest and serve. Transfer the chops to a clean serving dish and leave to rest for at least 3 minutes. Serve with the lemon cut into wedges and a fresh salad.
