Ingredients
- 4 thick pork chops
- 2 tablespoons olive oil
- 2 cloves garlic, finely chopped
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- 1 cup Weber pork wood chips (soaked in water for 30 minutes)
- Juice of 1 lemon
Instructions
- Prepare the pork chops: In a small bowl, mix together the olive oil, garlic, rosemary, thyme, salt and pepper. Generously brush the pork chops with this mixture, making sure to coat both sides well. Marinate in the refrigerator for at least 30 minutes to absorb the flavours.
- Prepare the barbecue: Preheat the barbecue to medium heat. If you are using a charcoal barbecue, make sure the coals are hot and ready. Place an aluminium tray in the centre of the barbecue to catch the fat and prevent flames.
- Add the wood chips: Drain the soaked wood chips and place them in a smoker box or directly on the hot coals. Close the lid of the barbecue and let the wood chips start to smoke. This usually takes about 5-10 minutes.
- Cooking the chops: Place the pork chops on the grill, directly on the aluminium tray to prevent the fat from dripping onto the coals. Cook with the lid closed for 5-7 minutes per side, or until the chops reach an internal temperature of 63°C. This method ensures that the chops absorb the smoky flavour without drying out.
- Add the finishing touch: Just before removing the chops from the grill, squeeze a little fresh lemon juice over each one to add a touch of acidity and freshness. This will balance the smoky flavour of the wood chips.
