A spectacular twist on the classic "pulled pork", but using fresh salmon: quick, juicy, full of natural smoky flavour... and making the most of the full control of the Woodfire XL!
Ingredients
1 large piece of fresh salmon (about 800g to 1kg, skin-on)
2 tablespoons of pure honey
2 tablespoons of chipotle sauce (or chipotle adobo)
1 tablespoon of Dijon mustard
1 teaspoon of garlic powder
1 teaspoon of onion powder
1 teaspoon of sweet smoked paprika
Coarse salt and freshly ground black pepper, to taste
1 handful of cherry or applewood pellets (for a mild and sweet smoke)

1. Prepare the Salmon

In a bowl, mix the honey, chipotle sauce, Dijon mustard, garlic powder, onion powder, and paprika.
Generously brush the salmon with this mixture using a cooking brush, making sure to cover the entire piece, including the skin side.
Let it rest in the fridge for at least 30 minutes to absorb the flavours.

Place the salmon on a perforated tray or directly on the grill (you can use aluminium foil underneath if you prefer it not to stick).
Close the lid and cook for about 35 to 45 minutes, depending on the thickness of the salmon, until it reaches an internal temperature of 60°C in the centre.
5. Pull the Salmon
Once cooked, remove the salmon and use two forks to shred it into thick strands ("pull" it).
Mix the shredded fish with the remaining juices to maximise the smoky and sweet flavour of the glaze.
