- 2 tablespoons achiote paste
- 120 ml pineapple juice
- 2 tablespoons apple cider vinegar
- 2 cloves garlic, minced
- 1 tbsp dried oregano
- 1 tsp ground cumin
- 1 tsp paprika (sweet or hot, to taste)
- 1 tsp salt + black pepper to taste
- 8–10 corn tortillas
- 1/2 fresh pineapple, thinly sliced
- 1 red onion, minced + fresh coriander
- Lime, quartered
