    • 1 tablespoon garlic powder
    • 1 tablespoon onion powder
    • 1 teaspoon black pepper
    • 1 tablespoon coarse salt
    • 2 tablespoons brown sugar
  • Wood for smoking: apple (sweeter) or walnut (more intense). Avoid using resinous woods such as pine.
