Ingredients

  • 1 thick ribeye steak
  • Coarse or flaked salt
  • Black pepper
  • 40 g butter
  • 2 cloves of crushed garlic
  • 2 sprigs of thyme or rosemary
  • 1 piece of wood for smoking, optional
  • A little oil for the searing surface

Preparation

  • Remove the ribeye steak from the refrigerator in advance and dry it thoroughly.
  • Season with salt and pepper.
  • Light the Joe Jr and stabilise it with gentle indirect cooking. If you want that smoky flavour, add a piece of wood.
  • Cook the entrecôte on the indirect side until it is close to the doneness you like. In official Kamado Joe steak recipes, the meat is first cooked indirectly and then finished over high heat for the final searing.
  • While the meat is resting for a few minutes, open the vents and raise the kamado to a high temperature. Place the searing plate so that it accumulates heat well. Kamado Joe recommends a temperature of around 288-315 °C for the final finish in reverse seared ribeye recipes, i.e. a very high heat to form a crust.
  • Put a small amount of oil on the searing surface and sear the entrecôte. In Kamado Joe's official reverse smoke and reverse sear recipes, the final searing is done with very short, controlled passes, around 20-30 seconds per side or short bursts until the desired point is reached.
  • Add the butter, garlic and herbs to baste the meat while it finishes browning.
  • Leave to rest for a few minutes and slice before serving.
