Chicken version:
  • 400 grams of chicken breast, cut into medium-sized cubes
  • 1 courgette, cut into thick slices
  • 1 red pepper, cut into chunks
  • 1 red onion, cut into segments
  • 8 whole cherry tomatoes
  • The juice of 1 fresh lemon
  • 2 tablespoons of extra virgin olive oil
  • 1 clove of garlic, finely chopped
  • 1 teaspoon sweet or smoked paprika
  • Sea salt and black pepper to taste
  • Stainless steel or wooden skewers (soak wooden skewers beforehand)
Vegetarian version:
  • 250 grams firm tofu, cut into cubes and drained
  • 2 tablespoons soy sauce
  • Juice of half a lemon
  • 1 clove garlic, minced
  • Small whole portobello mushrooms (optional)
  • The rest of the vegetable ingredients are the same as in the chicken version.
