This barbecue cauliflower recipe is ideal for enjoying a healthy, flavourful dish, either as a side dish or as a vegetarian main course. Barbecued cauliflower takes on a smoky flavour and a tender, juicy texture, with a crispy exterior thanks to the spice marinade.

Ingredients

  • 1 large cauliflower, washed and cut into 1-2 cm thick ‘steaks’ or large florets
  • 3 tablespoons olive oil
  • 2 teaspoons sweet paprika (you can use smoked paprika for more flavour)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon ground cumin
  • ½ teaspoon dried oregano
  • Salt and pepper to taste
  • Juice of ½ lemon (optional, for a citrus touch)
  • Barbecue sauce for brushing (optional)

Preparation

  1. Prepare the cauliflower Cut the cauliflower into 1-2 cm thick ‘steaks’ if you want a cauliflower ‘steak’ presentation, or simply divide it into large florets for a more casual version.
  2. Mix the marinade In a small bowl, mix the olive oil, paprika, garlic powder, onion powder, cumin, oregano, salt and pepper. If you prefer a fresher flavour, add the lemon juice. Stir well until you have a smooth paste.
  3. Marinate the Cauliflower Using a basting brush, generously coat both sides of the cauliflower ‘steaks’ or florets with the marinade. Be sure to cover the entire surface so that the flavour penetrates well.
  4. Preheat the Barbecue Preheat the barbecue to medium-high heat (around 180-200°C). If you have a deflector system or grill plate, place them in position to prevent the cauliflower from burning and allow for more even cooking.
  5. Cook the cauliflower Place the cauliflower on the grill and cook for 5-7 minutes on each side, or until tender and golden brown and crispy on the outside. If you want an extra touch, you can brush on a little barbecue sauce during the last few minutes of cooking.
  6. Serving Remove the cauliflower from the barbecue and serve immediately. You can accompany it with a little chopped fresh parsley or lemon zest to enhance the flavours.
