Recipe for Orange and Rosemary Pork Loin in Kamado with Roasted Vegetables

This pork tenderloin with orange and rosemary is an ideal recipe for a flavourful outdoor experience. Cooking in a kamado enhances the juiciness and allows the aromas of orange and rosemary to permeate every bite. Perfect for a special meal with friends. Ingredients:
  • 1 pork loin, approximately 1.5 kg
  • Juice of 2 oranges
  • Zest of 1 orange
  • 4 sprigs of fresh rosemary
  • 4 cloves of garlic, chopped
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • 1 tablespoon of honey
  • 1 kg of mixed vegetables (peppers, carrots, onions and small potatoes)
  • Additional olive oil for the vegetables
Instructions:
  1. Preparation of the marinade: In a bowl, mix the orange juice and zest, rosemary (reserve a few leaves for garnish), chopped garlic, honey, salt, pepper and olive oil.
