complete maintenance plan, divided by frequency and type of task, to keep your equipment running like new for years to come.
1. Cleaning after each use (essential basic routine)
Cleaning immediately after use is key to preventing the build-up of grease, food residue and ash that could affect performance.
- Let cool completely: Never clean hot equipment. Wait until it is completely cool to avoid burns and protect the components.
- Remove ash: Remove the ash collector and empty it completely. Ash build-up can obstruct air flow.
- Cleaning the grates: Use a steel bristle brush to remove any charred food residue. If necessary, apply a little vegetable oil after cleaning to keep the cast iron surface in good condition.
- Cleaning the cooking chamber: Wipe with a dry cloth or one slightly dampened with hot water to remove any grease. Avoid abrasive chemicals that could damage the enamel or sensors.

Ingredients
- 1 piece of picanha (approximately 1.5 to 2 kg)
- 2 tablespoons coarse salt
- 2 tablespoons ground black pepper
- 2 tablespoons garlic powder
- 2 tablespoons dried or fresh chopped rosemary
- 2 tablespoons dried thyme
- 80 g butter
- 3 cloves of garlic
- 1 tablespoon of Dijon mustard
- Oak or mesquite wood chips for smoking
Step-by-step preparation
1. Preparing the cut
- Clean the picanha, keeping its outer layer of fat.
- Mix the salt, pepper, garlic powder, rosemary and thyme, and massage the meat well on all sides.
- Refrigerate for at least 4 hours or, ideally, overnight.
2. Light the barbecue
- Fill the hopper with good quality briquettes and add wood chips for smoking.
- Set the temperature to 120°C using the app or digital panel.
- Place the picanha on the grill with the fat side up. Cook for 2 to 2.5 hours or until the meat reaches an internal temperature of 54°C (medium rare).
