Grilled Suckling Pig Recipe on the Gravity Series XT

Preparing a grilled suckling pig is a culinary experience that requires time and dedication, but with the Masterbuilt Gravity Series XT Charcoal Barbecue, the process becomes a much simpler and more precise task. This step-by-step recipe will guide you to achieve a suckling pig with crispy skin and tender, juicy meat, using the advanced capabilities of this grill.

Ingredients:

  • 1 suckling pig of approximately 5-6 kg
  • 8 cloves of garlic
  • 1 sprig of fresh rosemary
  • 1 sprig of fresh thyme
  • 2 bay leaves
  • 100 ml extra virgin olive oil
  • 200 ml white wine
  • Coarse salt to taste
  • Freshly ground black pepper to taste

Step 1: Preparation of the suckling pig

Start by preparing the suckling pig. Clean the piglet thoroughly, making sure that there is no guts or blood left. Dry it with kitchen paper and, using a sharp knife, make small cuts in the skin of the suckling pig, this will help the skin to crisp up during cooking.

Step 2: Preparation of the marinade

In a mortar, crush the garlic cloves together with the rosemary, thyme and bay leaves. Add the coarse salt and black pepper to taste, and continue pounding until a paste is formed. Add the olive oil and mix well. With this preparation, spread generously all over the suckling pig, making sure that the mixture penetrates the cuts you have previously made in the skin.

Step 3: Preheating the Grill

Turn on your Gravity Series XT and set the temperature to 120°C for slow cooking. This low initial heat will allow the suckling pig to cook evenly without burning the skin. Thanks to the grill’s DigitalFan™ fan, the airflow will be constant, ensuring that the heat is evenly distributed.

Step 4: First Cooking Phase

Place the suckling pig on the grill, skin side up, and close the lid. Make sure the temperature probes are placed in the thickest parts of the meat to monitor the internal cooking. Once the desired internal temperature has been reached, remove the suckling pig from the grill and allow it to rest for 15-20 minutes before slicing. This will allow the juices to redistribute within the meat, ensuring a juicy and flavourful end result.
