BBQ Style Smoked Ribs with Masterbuilt Charcoal

Enjoy BBQ-style smoked ribs using Masterbuilt charcoal on your Masterbuilt Gravity Series BBQ. This recipe combines the deep smoky flavour with the juiciness of the ribs, creating a dish that everyone will love.

Ingredients

  • 2 racks of pork ribs (St. Louis or baby back)
  • 2 tablespoons olive oil
  • 3 tablespoons yellow mustard
  • 1/4 cup of your favourite Dry Rub mix (you can use a mixture of paprika, brown sugar, salt, pepper, garlic powder, onion powder, and chili powder)
  • 1 cup apple juice (optional, to keep the moisture in during cooking)
  • 1/2 cup of your favourite BBQ sauce
  • Smoking woods (such as apple or hickory) to add to the coals

Preparation

1. Preparation of the ribs

  1. Prepare the ribs: Remove the membrane from the underside of the ribs to allow the flavour to penetrate better and make them easier to eat.
  2. Apply the oil and mustard: Lightly brush the ribs with olive oil and then with yellow mustard. The mustard will help the Dry Rub adhere better to the meat and add flavour during cooking.
  3. Coat with Dry Rub: Generously apply the Dry Rub all over the ribs, covering both sides. Let the ribs rest while you prepare the barbecue.

2. Barbecue Preparation

  1. Fire up the barbecue: Fill the tank of your Masterbuilt Gravity Series barbecue with Masterbuilt charcoal. Add smoking woods directly on top of the charcoal or in your barbecue smoker for a deep smoky flavour.
  2. Set the temperature: Set the barbecue to 110°C (225°F). This will allow for slow and low cooking, ideal for smoking ribs.

3. Cooking the Ribs

  1. Place the ribs on the grill: Once the barbecue has reached temperature, place the ribs directly on the rack, bone side down.
  2. Smoke the ribs: Close the lid and let the ribs cook for approximately 3 hours. During this time, you can spray the ribs occasionally with apple juice to keep them moist.
  3. Wrap and continue cooking: After 3 hours, remove the ribs and wrap them in foil, adding a little apple juice inside the packet. Return the wrapped ribs to the grill and cook for another 2 hours.
  4. Sauce and finish: Carefully unwrap the ribs and apply a generous layer of BBQ sauce on both sides. Cook the unwrapped ribs for another hour to allow the sauce to caramelise and the ribs to take on a deep, glossy colour.

4. Serve and Enjoy

  1. Remove and rest: Once the ribs are ready, remove them from the grill and let them rest for 10 minutes before slicing.
  2. Slice and serve: Slice the ribs between the bones and serve hot, accompanied by your favourite garnish such as coleslaw, corn on the cob or garlic bread.

Additional Tip

For extremely tender ribs that fall off the bone, you can extend the cooking time in the foil (step 3) for an additional 30 minutes, making sure the internal temperature of the meat reaches at least 88°C (190°F).
