🇬🇷 Greek Lamb Gyros on the Rotisserie with Toasted Pita Bread

Mediterranean authenticity powered by infrared heat

📝 Ingredients (serves 6)

For the Meat:

  • 1.5 kg of deboned leg of lamb, cut into thin fillets or medium chunks

  • 4 minced garlic cloves

  • 1 grated onion

  • Juice of 2 lemons

  • 100 ml of natural Greek yoghurt

  • 2 tablespoons of dried oregano

  • 1 teaspoon of ground cumin

  • 1 teaspoon of ground cinnamon

  • 1 teaspoon of sweet or smoked paprika

  • Salt and pepper to taste

  • 80 ml of extra virgin olive oil

For Accompanying:

  • 6fresh pita breads

  • Tzatzikisauce (yoghurt, cucumber, garlic, lemon)

  • Sliced tomato

  • Thinly sliced red onion

  • Fresh lettuce or rocket

  • Crumbled feta cheese (optional)

🔥 Preparing the Meat

  1. Marinade:
    In a large bowl, mix the yoghurt, lemon juice, garlic, grated onion, oil, and all the spices. Add the lamb pieces, ensuring they are well coated. Cover with cling film and leave to marinate in the fridge for at least 44 hours, ideally overnight.

  2. Assembly on the rotisserie:
    Remove the lamb from the marinade and pat it dry with kitchen paper to prevent excessive dripping. Thread the pieces onto the700 Series rotisserie spit, layering them to form a compact cylindrical “vertical kebab” shape. Tighten well with the folding forks and place it over the drip tray.

🔥 Cooking on the 700 Series

  1. Lighting the Equipment:
    Switch to the rear infrared burner using the electronic ignition. Do not use the main burners; all the heat should come from the back for even, rotating cooking.

  2. Rotation and Temperature:
    Activate therotisserie motorso it begins to turn slowly. Close the lid. Cook for70 to 90 minutes, depending on thickness and preferred doneness. Aim for an internal temperature of 68–70 °C for juicy, pink meat. Use a thermometer to monitor.

  3. Finishing Touch:
    Once cooked, turn off the rear burner, carefully remove the rotisserie with heat-resistant gloves, and allow it to rest for10 minutesbefore carving. This lets the juices redistribute, making the meat even more tender.

🔥 Grilling the Pita Bread

  1. Light two main burners on medium heat and place the pita breads directly on theWAVE™ gratesof the 700 Series.

  2. Flip them for 30–60 seconds per side until they are marked, hot, and slightly crispy.

🍽️ Assembling the Gyros

Slice the meat thinly straight from the spit, as is traditionally done. Serve it in toasted pita bread with tzatziki, tomato, onion, lettuce, and, if you wish, feta cheese. Roll it up like a wrap or serve it Mediterranean-style on a plate.

👨‍🍳 Chef’s Tip

For an extra-crispy kebab finish, you can place the cooked meat back on the rotisserie in front of the rear burner for a few more minutes while carving, keeping it golden and piping hot.
